Ingredients

  • Rice – 1 bowl (about 210g) (about 7.4 oz; cooked rice)
  • Spam – 100g (about 3.5 oz; canned luncheon meat, diced)
  • Kimchi – 100g (about 3.5 oz; preferably well-aged kimchi)
  • Scallion – 30g (about 1 oz; thinly sliced)
  • (1 T = 15 ml / 0.5 fl oz, 1 t = 5 ml / 0.17 fl oz)

Sauce

  • Jin-ganjang – 1 T (Korean soy sauce used for everyday cooking; regular soy sauce works fine)
  • Sugar – 1/2 T
  • Cooking oil – 2 T
  • Salt – to taste
  • Pepper – to taste
  • (1 T = 15 ml / 0.5 fl oz, 1 t = 5 ml / 0.17 fl oz)

How to Make It

  • Dice the spam, thinly slice the scallion, and cut the kimchi into small pieces with kitchen scissors.
  • Soak the spam in hot water for about 3 minutes. As I mentioned before, this helps remove a lot of the added chemicals.
  • Heat oil in a pan and slowly cook the scallion over low heat. Most people toss scallions into a hot pan to make scallion oil, but the trick is to cook it gently over low heat so the aromatics infuse into the oil without burning.
  • Once the scallion has softened, add the spam and cook over low heat.
  • Once the spam is cooked through, add the kimchi.
  • Right away, add in 1/2 T of sugar. I accidentally added a full tablespoon once and it turned out a bit too sweet.
  • Drizzle the soy sauce along the edge of the pan to let it caramelize slightly, then stir everything together.
  • Turn off the heat, add the rice, and mix everything together. Mixing with the heat still on can cause the ingredients to burn while you stir.
  • Once everything is combined, stir-fry over high heat for about 30 seconds.
  • I also topped mine with a fried egg. You already know how good this tastes.
